How To Prepare Akara



Akara is a Nigerian snack made from beans mixed with seasonings and formed into balls and deep fried. Akara can be made using actual beans (black eyed peas) washed properly to remove the chaff or easily and more convenient using bean flour.

Am sure you must be familiar with bean flour from our previous Moi-Moi recipe, and so i will also be using it for this recipe.

Servings: 1-2

Ingredients:

  • 1 cup of bean flour (a cup = 250ml)
  • 1 cup of water (at room temperature)
  • 1 Stock cube (maggi)
  • 1/4 tsp. of ginger (optional)
  • 1/4 tsp. garlic (optional)
  • 1/2 tsp. ground red pepper
  • A pinch of salt (optional)
  • 1 medium onion bulb (Diced)
  • 2 cups of vegetable oil (for frying)
Procedure;
  • In a medium bowl pour the 1 cup of bean flour add water gradually and mix very well
  • Add in the diced onion, stock cubes, ginger, garlic, ground pepper and salt
  • Stir very well to a cake batter consistency as pictured below  and set aside

  • Place a medium size pan on the fire, pour in the 2 cups of vegetable oil, let it heat for about 2-3 minutes until hot
  • Using a medium sized spoon, scoop batter into the hot oil and fry for about 1-2 minutes till the underside turns dark-brown

  • Use a fork to flip over the other side to fry also till it also turns dark-brown
  • Layer a plate with paper towel, then scoop out the Akara balls out of the pan into the layered plate
  • Your Akara is ready, it is commonly eaten with pap or bread here in Nigeria
