Adzuki beans are very tasty. the pint-sized, high-fibre legume is also packed full of nutrients such as iron, potassium and zinc. They also have one of the highest amounts of protein among the bean varieties.

Serving 4
Ingredients;
- 1/2 cup adzuki beans
- 1/2 cup green lentils (optional)
- 1/2 bag spinach
- 1 red bell pepper, roughly chopped
- 1 medium onion, roughly chopped
- 6 cups vegetable stock/water
- 1 tablespoon pure olive oil
- 1 tablespoon curry powder
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Pinch of salt
Procedure:
- Wash the beans very well with cold water, and transfer to a medium pot
- Add lentils and vegetable stock and cook on low heat for 45-50 minutes or until soft. Be sure that the liquid does not dry out, add extra water if needed.
- Add pepper, onions, spinach, curry, thyme, garlic and salt. Stir very well and cook further for 15 minutes
- Add olive oil and, stir and cook for 5 minutes more
- Remove from heat and serve with bread slices or rice
