Healthy Nigerian Okra Soup Recipe


A very healthy delicious soup, eaten with pounded yam, amala, white or ground rice

Ingredients:

  • 1 cup Okra, chopped
  • 2 cups Water
  • 1 medium Onion, diced
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground pepper
  • 3 tablespoon Palm oil (or more as desired)
  • 2 Stock cubes (maggi)
  • 1 kg Assorted meat (beef, shaki, dried or smoked fish, stock fish)
  • 1/4 cup Ground crayfish
  • 300g Spinach, finely chopped
Procedure:
  • Wash the assorted meat/fish thoroughly, put in a large pot and bring to boil on medium-high heat for about 3 minutes
  •  Add water, onions, pepper, salt and stock cube. Cover and simmer for 30 minutes
  • Add ground crayfish, palm oil and the chopped okra and give it a good stir. Cover and let simmer on low-medium heat for 10 minutes more
  • Add spinach, stir and continue to simmer for another 5 minutes
  • Remove from heat and serve
