The Pepper chicken is one recipe that is relished by everyone, irrespective of age. Soft chicken pieces covered in a thick Black Pepper sauce. The Black Pepper is a popular spice with various health benefits, it makes food healthy. Either in powdered form or as whole spice, black pepper is used most of the recipes.
Remember to freshly crush some pepper to get that extra zing. Now let's look at the preparation method of this hot and spicy recipe.
Ingredients;
- 500g of chicken pieces
- whole spices (cloves, cinnamon sticks, cardamoms)
- 3 medium onions (finely chopped)
- 2 green chilies (slit)
- 1 1/2 tsp ginger garlic paste
- 2 tomatoes (chopped)
- 2 tsp cumin powder
- 2-3 tsp pepper powder (or as desired)
- 2 tablespoon vegetable oil
- A handful of fresh Curry leaves
- Few sprigs of fresh coriander leaves
- Juice of 1/2 lime (optional)
- 1/4 cup small and thin pieces of chopped coconut (optional)
Preparation;
- First heat oil in a pan
- Add whole spices and curry leaves, when the curry leaves turns crisp, add the chopped onions along with the green chilies.
- Saute the onions, until they turn light brown, then add the Ginger garlic paste and keep stirring until the raw smell disappears
- Add the chopped tomatoes and keep stirring (wait until the oil separates from the pan)
- Add the cumin powder and the Chicken pieces. Mix very well so that the gravy coats the chicken on all sides. Add the pepper powder and mix well
- You can then add in about 1/2 a glass of water and stir
- Cover to cook on low heat, once the chicken is cooked remove the lid. If the gravy is too thin, wait until it thickens
- Remove from heat. Add a dash of limejuice, then finally, garnish with fresh coriander leaves and the coconut pieces fried lightly in oil.
For more gravy, add a couple of tomatoes and pepper powder according to personal taste.
Another method of preparing pepper chicken recipe is to follow the same procedure as above.
Instead of adding pepper powder along with cumin powder, add a teaspoon each of red chilie powder and coriander powder along with cumin powder. Then cover and cook the chicken.
Once the chicken is cooked, finally add a teaspoon each of fennel powder and pepper powder (ground together). Then garnish with coriander leaves. You could forgo the coconut pieces for this recipe.
