This is a great recipe for BBQ, it is quite hot and not for faint hearts.
Ingredients:
- 1 cup long fresh red chilli, seeds removed
- 2 cups white vinegar (or less)
- 2 cups sugar
- 2 inch fresh ginger
- 8 small garlic cloves
- 1 teaspoon salt
Procedure:
- Divide the chilli into two equal parts, then remove the seeds from one one part only leaving the other part with the seeds intact and set aside
- Place seeded chilli, garlic and 1 cup of white vinegar in the bowl of a food processor/blender. Process/blend until finely chopped, add the other part of the chilli and blend futher to your consistency (but more preferably if the seeds are visible)
- Place the chilli mixture, sugar and remaining vinegar in a large saucepan over a low heat and cook for 5 minutes or until the sugar dissolves. Stirring all the way
- Increase heat to high and allow to boil. Thereafter, reduce heat to medium and simmer, stirring occasionally for 35 - 40 minutes or until the sauce thickens to your consistency
- Allow to cool down and pour into clean containers or bottles with lid
Refrigerate until ready for use
