This is a traditional Nigerian recipe for a classic kofta-style kebab of minced beef, spices and chillies packed onto skewers and grilled.
Ingredients:
- 500g lean minced beef
- 1 tablespoon ground chillies
- 1 onion, finely chopped
- 1 egg, beaten
- 2 tablespoon fresh chopped spinach
- 1 nutmeg, finely grated to powder
- Salt to taste
- Oil for brushing
Procedure:
- Place all the ingredients (except the oil) in a large bowl and mix very well with your hands
- Cover and refrigerate for 1 hour
- Divide the mixture into 12 equal portions or as desired and shape each into a sausage about 5cm long
- Soak 4 kebab skewers in water for an hour and push through the sausages, ensuring you mold them firmly onto the skewer
- Brush the kebabs all over with oil and place under a grill or on a barbecue and cook for 10 minutes, turning frequently
- Remove from heat and serve preferably with tomato, lemon and onion slices or salad
