Ingredients:
- 1 Tuber of Yam
- 2 ltrs of water
Procedure:
For the flour;
- Peal off the brown outer layer and cut the yam into flat little pieces
- Transfer into a bowl and wash thoroughly.
- Drain the water and spread the pieces of yam on a large pan, and keep in a safe place outside to dry under direct sunlight (it usually take about 4-7 days to dry properly)
- When properly dried, it will be very hard and flaky, then blend the pieces of yam into very smooth flour
For the Amala;
- Add about 2 ltrs of water to a large pan or pot.
- Bring this to a boil then slowly add the flour (Amala), stirring all the while.
- Keep adding the flour (Amala) until the mixture becomes thick to your taste
- Once you have added enough of the flour keep stirring the mixture until it is smooth and uniform in texture and completely heated through. (you may not use all of the flour depending on how thick you want it to be).
- Your Amala is ready to serve immediately with any soup.
