Ingredients:
- 1 whole catfish cut into pieces (or as desired)
- 1/2 tsp. yellow or dry black pepper
- 1/2 tsp. grinded ginger
- 3 red plum tomatoes (optional)
- Seasoning
- Eire (Scent leaf, popularly called Ntong by the Efik people)
- Utazi leaves (optional)
- Uriren (optional)
- 1/4 tsp salt
- 1 1/2 ltr of water
Procedure:
- Wash and slice the fresh plum tomatoes and set aside
- Cut the whole catfish into pieces as desired
- Wash the pieces of catfish in warm water thoroughly to remove the slime from the skin and set aside
- Blend all the ingredients you have (the spices and pepper)
- Add the 1 1/2 ltr. of water into a thick pan and bring to boil for 5 minutes
- Add the pepper and salt followed by all the other blended ingredients one after the other
- Stir and allow to boil for 2 minutes
- Add all the pieces of the catfish and allow to boil for another 10 minutes
- Add the Efiri (scent leaf) and Utazi
- Add the sliced fresh tomatoes and stir, cover and allow to boil for 3 more minutes
- Have a taste to check if seasoning is ok
- Serve hot in a bowl with chilled drink
