Servings; 4-5
Ingredients;
- 2 large coconut fruit (for the coconut milk)
- 4 cups of white rice
- 2 cups of water (hot)
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 stock cubes (Maggi)
- 1 cup of crayfish
- 1kg of beef, poultry
- 1 medium size onion bulb
- 1/2 tin tomato paste (optional)
- Vegetables; carrots, green beans, peas...(optional for garnishing)
Preparation;
- First of all prepare the coconut milk; Remove the shell from the coconut fruit to get the inner white flesh, grate the white flesh and soak in the hot water for about 10mins, sieve the liquid in order to separate it from the chaff squeezing the mixture in the process, set the milk aside.
- Prepare the vegetables
- Parboil the white rice for 10mins until tender
- Wash the rice to remove starch with running water
- Season and cook the meat until soft
- Fry or grill the meat
- Pour the coconut milk in a pot and bring to boil
- You can add the broth from the cooked meat (optional)
- Add the stock cubes, salt, pepper, onions and crayfish, vegetables & tomato paste, stir and allow to boil for 2 mins.
- Add the parboiled rice, stir and allow to boil until water dries out (it usually take 20mins)
- Serve with the fried or grilled meat/poultry
