Bianfran Stew Recipe




This stew recipe comes from southern Nigeria (Biafra).

Ingredients:

  • 675g stewing beef, cubed
  • 1.2kg small chicken pieces
  • 800g tinned whole tomatoes
  • 1 green bell pepper, coarsely chopped
  • 2 hot chilli peppers, pounded to paste
  • 1 medium onion, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Groundnut oil, to fry
Procedure:
  • First of all steam meat (beef and chicken) in a small pot for about 5 minutes
  • Heat the oil in a large pot
  • Add in the meat and fry until it turns out dark brown
  • Add in the onion and chilli, and fry for 2 minutes more
  • Add in the remaining ingredients and cook on medium to low heat for about 30 minutes or until the beef is tender.
  • If there are whole pieces of tomato still in the pot, mash them with the back of a spoon (if you don't want them that way)
  • Serve hot with couscous
