This is a typical traditional Nigerian recipe. It consist of cooked and dried beans coated in curry powder that are deep-fried before serving.

Ingredients:
- 300g beans (black-eyed peas)
- 2 tablespoon curry powder
- Salt, to taste
- Groundnut oil for frying
Procedure:
- Soak the beans over night in plenty of water
- Add 1.5 litre of water in a pot and bring to boil
- drain the soaked beans and add to the pot of boiling water. Reduce to a simmer, cover the pot and cook for about 140 minutes, or until the beans are very soft
- Pour the beans into a fine-meshed sieve and allow any excess water to drain away completely
- Spread the beans on a large tray and put aside to air dry. The beans is ready to fry once its well dried
- Add in the curry powder to the beans and stir very well to incorporate
- Heat oil in a large pot. Once the oil is hot, add half of the beans and cook for about 6 minutes, or until the beans are well browned.
- Remove the beans with a slotted spoon, drain on kitchen paper. Repeat with the second batch of beans
- Serve sprinkled with a little salt
