Ingredients:
- 1kg beef
- 2 medium onions, sliced (1 onion chopped, the other pounded to a paste)
- 6 green tomatoes, pounded to a paste
- 10 green chillies, pounded to a paste
- 6 tablespoon palm oil
- 6 green bell peppers, de-seeded and pounded to a paste
- Salt to taste
Procedure:
- Wash the beef and cut into 2cm dice
- Add to a pot along with some salt, chopped onion and a little stock. Allow to cook for 30 minutes
- Meanwhile, heat the oil in a pan and add the tomatoes, chillies, onions and green bell pepper and fry for 15 minutes
- Add the fried ingredients to the boiling meat, stir to combine and simmer for 10 minutes more
- Remove from heat and serve on a bed of boiled rice with a sprig of fresh parsley
