Mango and Papaya Salsa Stuffed in Avocado Recipe



This is a traditional West African recipe for a classic salsa of mango, onion, papaya and chillies served as a condiment.

Ingredients:

  • 1 large avocado
  • 1 large ripe mango, finely diced
  • 1/2 red onion, finely diced
  • 1/2 teaspoon black pepper
  • 1 large papaya, mashed
  • 3 red chillies, finely chopped
  • Juice of 2 limes
  • Parsley (optional)
  • Salt to taste
Procedure:


  • Mix all the ingredients together in a bowl 
  • Cover with foil and keep in a refrigerator for about 20 minutes
  • Peel off the skin of the avocado and cut into two halves
  • Scoop the  mango and papaya mix into the avocado
  • Serve as an accompaniment to salad or as a salsa dip. It also goes very well with fish
