Shuku-shuku (Coconut Biscuits) is a traditional Nigerian recipe made from a mix of coconut and egg that is baked in the oven.

Ingredients:
- 1 medium coconut
- 3 egg yolks
- 50g caster sugar
Procedure:
- Preheat oven to 170 degree Celsius
- Grate the flesh of the coconut and squeeze
- Mix together the squeezed coconut, egg yolks and sugar
- Mold them into small balls of about 2cm in diamater
- Roll each ball in flour and place on an oiled baking sheet
- Transfer oven and bake until it turns out golden brown
- Allow to cool down and store in air-tight containers
