Shuku-shuku (Coconut Biscuits) Recipe


Shuku-shuku (Coconut Biscuits) is a traditional Nigerian recipe made from a mix of coconut and egg that is baked in the oven.

Ingredients:

  • 1 medium coconut
  • 3 egg yolks
  • 50g caster sugar
Procedure:
  • Preheat oven to 170 degree Celsius
  • Grate the flesh of the coconut and squeeze 
  • Mix together the squeezed coconut, egg yolks and sugar
  • Mold them into small balls of about 2cm in diamater
  • Roll each ball in flour and place on an oiled baking sheet
  • Transfer oven and bake until it turns out golden brown
  • Allow to cool down and store in air-tight containers
