Yam Balls is a traditional West African recipe for a staple of yams, tomatoes and onion shaped into balls.

Ingredients:
- 1kg yams, boiled until soft
- 1 large onion, finely chopped
- 3 fresh tomatoes, peeled and finely diced
- 1 tablespoon ground pepper
- 460ml groundnut oil
- 1/2 tablespoon dried thyme
- 2 eggs, beaten
- 1 tablespoon flour
- Salt to taste
Procedure
- Mash the boiled yam until smooth and set aside
- Combine half the tomatoes with half the onions and the pepper and fry the mixture in 60ml groundnut oil
- Season with salt and thyme and cook for about 2 minutes
- Pour into a bowl, add the remaining tomatoes and onions as well as the mashed yam
- Mix together thoroughly, add the eggs and continue to mix until they are well combined
- On a floured surface, mold the mixture into balls
- Heat the remaining oil in deep-frying pan and deep-fry the yam balls until golden brown
- Drain on kitchen paper and serve
