Pot Roast is a traditional West African recipe for a dish of beef pot roasted with a chilli, peanut butter and tomato sauce. The full recipe is presented here and I hope you enjoy this classic West African version.
Ingredients:
- 1.8kg boneless rolled beef
- 2 tablespoon vegetable oil
- 180g onion, thinly sliced
- 240ml water
- 120ml peanut butter
- 60ml tomato paste
- 80ml lemon juice
- 1/2 tablespoon thyme
- 1 scotch bonnet chilli, pounded to a paste
Procedure:
- Heat the oil in a large casserole pot over medium heat.
- Pat the meat dry and add to the oil along with the onions
- Brown the meat on all sides then mix the water with the peanut butter and add to the casserole along with the tomato paste, the chilli and the seasonings
- Cover tightly and bake in an oven pre-heated to 160 degree celcius for between 2 to 3 hours (until the meat is tender and gives no resistance to a fork).
- Lift the meat onto a cutting board, cover with foil and allow to stand for 10 minutes. If desired thicken the sauce with 3 tablespoon flour dissolved in 50ml water. When the meat is ready slice across the grain and serve with the sauce spooned over the top.
